Spanish Chicken

Ingredients
- Olive Oil
- 2 chicken breasts
- 1 onion, thinly sliced
- 1 yellow pepper, cut into large pieces
- Chorizo
- 100ml red wine
- 400g tin chopped tomatoes
- 400g tin butter beans
- 1 tablespoon tomato purée
- 1 chicken stock cube
- rice
- green beans
- salt and pepper
Directions
- Start cooking the pilau rice (put 100g of rice per person in a pan with 200g of boiling water). Add a lid, cook for 15 minutes on the lowest heat, then leave to rest for 15 minutes).
- Heat the oil in a pan and fry the chicken for a couple of minutes.
- Remove the chicken from the pan, then add the onion, pepper and chorizo. Fry for about 3 minutes.
- Add the wine, tomatoes, butter beans, tomato purée and stock cube and some water and mix. Bring to the boil and add the chicken, then cook for 10 minutes.
