Poha

  1. Rinse the Poha flakes thoroughly through a strainer and then leave damp for about 5 minutes. If they aren’t starting to swell and soak in the water then sprinkle with some more water, but be careful not to let them turn mushy.
  2. Fry the peanuts in some oil over a medium heat until golden brown, then put to one side
  3. Add the rest of the oil, reduce the heat, then add the mustard and cumin seeds. Cover the pan as the mustard seeds will start popping.
  4. Add the onion, chilli and curry leaves and the asafoetida, and mix together
  5. Add the turmeric, potato and a dash of water, then cover and cook for about 3 minutes, or until potato softens
  6. Add the Poha and mix well. Add a dash of water and the lemon juice. Cover and cook until heated through
  7. Add the peanuts, coriander leaves and serve.
