Poha

Ingredients
- 60g medium Poha flakes
- 1/2 an onion, finely chopped
- 1 small potato, cut into small cubes
- 1 green chilli, sliced
- pinch of curry leaves
- 1 tbsp oil
- hand full of peanuts
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- pinch of asafoetida
- pinch of turmeric
- pinch of salt
- 1/2 tsp sugar
- lemon juice
- pinch of chopped coriander leaves
Directions
- Rinse the Poha flakes thoroughly through a strainer and then leave damp for about 5 minutes. If they aren’t starting to swell and soak in the water then sprinkle with some more water, but be careful not to let them turn mushy.
- Fry the peanuts in some oil over a medium heat until golden brown, then put to one side
- Add the rest of the oil, reduce the heat, then add the mustard and cumin seeds. Cover the pan as the mustard seeds will start popping.
- Add the onion, chilli and curry leaves and the asafoetida, and mix together
- Add the turmeric, potato and a dash of water, then cover and cook for about 3 minutes, or until potato softens
- Add the Poha and mix well. Add a dash of water and the lemon juice. Cover and cook until heated through
- Add the peanuts, coriander leaves and serve.
