Directions

  1. Preheat oven to 180C and line an “8x8” tin with greaseproof paper.
  2. Melt the butter, then whisk in the sugar. Don’t allow the mix to get too hot, or the egg will cook when added.
  3. Lightly beat the egg and whisk in to the sugar.
  4. Add a small amount of maple syrup.
  5. Mix in the flour, baking power and bicarbonate of soda.
  6. Pour the mix in to the pan and bake for 25-30 minutes.
