American Pancakes

Directions

  1. Sift the flour, baking powder, salt and caster sugar into a large bowl.
  2. Lightly whisk together the milk and the egg, then whisk in the (cool) melted butter.
  3. Pour the milk mixture into the flour mixture, then beat together until smooth. Let the batter stand for a few minutes.
  4. Heat a pan with a little butter, then add some of the batter. When the batter starts to bubble, flip over.
  5. Serve with lashings of maple syrup.
